Rooibos Suite

The opening bars are sweet toffee notes building to a full symphonic caramel.  
Infusion: Reddish brown (depending on brew time and quantity)

• Pairing suggestions: Chocolate caramel tarts, caramel apple,banana desserts. Salmon or pork with a light sweet caramelized sauce
• Recipe: Crème au Caramel Rooibos Chai
• 4 cups water
• 2/3 cup whole milk
• 2 cinnamon sticks
• 2 teaspoons cardamom pods lightly crushed
• 1 teaspoon whole cloves
• 2 slices fresh ginger, quarter-size, lightly smashed
• 1/4 teaspoon whole black peppercorns
• 2 tablespoons demerara sugar
• 2 tablespoons loose crème au caramel rooibos tea leaves
• Prep time: 5 mins
• Total time: 25 mins
• - Combine all of the ingredients in a large saucepan and bring to a boil over moderate heat. Reduce the heat to moderately low and simmer, stirring occasionally, until pale rust colored, about 20 minutes.
• - Strain the chai through a fine sieve and serve hot.

The Khoi tribe of South Africa made tea from the rooibos plant as a method of improving their health. It is interesting to note they are particularly tall.
